How About Some Coffee?

The word Coffee comes from an ethiopian region named Kaffa, where it is believed to have been discovered. As legend has it, around the 10th century AD, a young goatherd named Kaldi awoke one morning to discover his goats missing and set off to search the hillsides for his flock. As the hot sun beat down on him, an exhausted Kaldi stumbled upon his goats jumping around near a shrub. Upon closer inspection, he noticed that some of the goats had been eating the red fruit of a nearby shrub. Upon trying this fruit Kaffa noticed the effects of caffiene.

Sometime later through experimentations with the fruit, it is said that someone tried cooking it and boiling it, only to find that it produced an awfully bitter liquid that was inedible. Out of frustration, the entire bushel of fruit was thrown into the fire. The astounding result was a captivating aroma. It was not long before coffee roasting lead to brewing in various

Why do we love Chicago Roasted Chicago?

Two simple reasons:
  • Freshness - Arguably the most important factor in espresso quality is freshness. Ideally, espresso should be made from beans roasted between 2-6 days prior. Even sooner for regular drip coffee. So, while we love the rich Italian roasts like Illy and Lavazza, there's something lost in weeks of sitting in a shipping container, and we don't even want to think about the preservatives required to keep it fresh that long.
     
  • Quality - There is a special relationship between an artisanal Roaster, and his coffee. He's not just doing his job, he's living his dream. It's this passion that assures us that every batch of coffee we get from Metropolis is roasted to its ideal temperature. We figure if you don't have this, you might as well drink Starbucks.
